Bink - Paperman Cabernet Franc (2020)
100% McLaren Vale fruit - Sellicks Hill. Picked end of February, made 2 batches. Batch 1 - 80% de-stemmend over 20% whole bunch. Left on skins until dry and pressed to seasoned barrels. Batch 2 - 20% de-stemmend over 80% whole bunch. Fermented dry on skins and pressed to barrel, continuous ferment from the whole bunch in barrel. Blended about 1 month before bottling. Very crunchy style of Cab Franc this year. Lifted blueberries, violets and black pepper for days. Soft graphite tannins and ripping acid that just gets you hooked on this little bad boy.
