Colston Biblio - "CB001" (2018)
COLOR: Becomes a very vibrant & transparent ruby in the glass. Almost luminescent.
NOSE: Grapefruit, Strawberry, Hibiscus and Raspberry Tea.
PALETTE: Fine tannin and lifted acidity give elegant texture. Red apple skin, cranberry, subtle spices.
This is Colston Biblio's first release. The wine is a co-ferment of super riper (i.e. purple almost red pinot gris) and Pinot Blanc. On skins for the full fermentation, which lasted two weeks, and ending up with a fresh ruby color. It did go through malo, so even though it looks bright and fresh, it also has texture and is still super floral. A bit of wine without category, but something I think is really unique and fun.
