Revel Cider - Waves (2022)
Waves is a cider with apples, red + blue plums, blended with a young Montmorency cherry cider.
Each fruit has built on top of each other to create something wildly crushable. Waves is our attempt to enhance the depth of each individual ingredient by bringing them together in a single neat package. Surfing the summer bounty of 2021, right into bottles—and determinedly ignoring the snow outside.

Revel Cider & ibi wines started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!
By 2021, our team was seven people strong — with over 1000 cases of Revel cans and bottles shipped to discerning drinkers every month.
Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)
Waves starts with gentle cinnamon and sweet plum in the aroma. The flavour is easy, with a touch of acid and a gentle salinity. Spiced Montmorency cherries fill out the soft, floral nature of the plums. A whisper of plum skin tannin gives this rosé-adjacent blend just the right amount of texture.
It's an incredibly drinkable, supremely balanced liquid that would make Goldilocks proud.
