Rocklands Farm - Champora Chambourcin Pet Nat (2019)
Produced at Rocklands Farm Winery in Poolesville, Maryland. The grapes come from a sustainably managed vineyard also located in Montgomery County, Maryland (about 40 minutes west of DC).
The wine is made from 100% Chambourcin free run juice. Essentially we loaded up 5 tons of whole cluster grapes into a large steel tank over the course of 6 hours or so. At the end, we pulled off about 60 gallons of free run juice to two 35 gallon flex tanks. After a few days of settling, the wine was racked into a custom made 60 gal clay amphora, where the slow fermentation began and remained until bottling about a month later. Zero additions from start to finish in the winemaking. The pet nat was disgorged on February 15th, 2020. 19 cases produced.
