Cacique Maravilla - Chacoli Pét Nat Rosé (2020)

IMPORTANT NOTE:

This is an undisgorged, living Pét Nat. Chill the wine upright. Clean the outside of the bottle after removing from the refrigerator. Very slowly lift the crown cap while holding the entire bottle of wine vertically over the glass. Do not entirely remove the crown cap from the bottle, just enough to let it release wine down the wine bottle and into the glass. Video instructions sent by request.

100% País from Bio Bio Valley Chile. 

Unfined & unfiltered - this wine is fermented spontaneously. 

The name Chacoli is a reference to the process in which the wine is made, very much like the Txakolis of old in the Basque Country. Made similarly to the Gutiflower Petnat, this is a Rosé of Pais dry farmed and grown organically. It is hand harvested, destemmed, skin macerated for 1 day (for color) then the free run juice is transferred into fiber glass tanks using gravity where it remains for 2 months before being bottled without filtering, fining, disgorging, or sulfur. Open with caution.

We grow Pais, Moscatel de Alejandria, Torontel, Corinto (Shazela), Cot as well as Cabernet Sauvignon (planted in 2000). Dry-farmed.
