This golden yellow pet nat hails from Slovenia
Pet Nat is an otherwise simple ancient process of wine production, which is one of the most difficult due to the unpredictability of the result. The term "Pet Nat" itself is an abbreviation of the French term petillant-naturelle, which means "completely natural". It is therefore a sparkling wine that is bottled before the end of the first fermentation. Thus, the bubbles are formed from the natural sugars present in the grapes.

Andrej and Tina Cep planted the first vineyards in Kolomban above Ankaran in 2004. From the very beginning, the vineyards have been worked without the use of chemical inputs such as pesticides, herbicides, systemics and fertilisers. Only sulphur and copper are used for spraying - in very moderate quantities - "I didn't know any other way", says the farmer, "because I was not burdened by the practices of my predecessors". Andrej didn't even know about the organic certification at the beginning, and only found out about it when he started to appear at wine events in Slovenia and abroad. The farm has been officially certified as organic since 2012. They are currently cultivating three and a half hectares of vineyards, with the ambition to increase this to five, for which they have already prepared the land next to the existing vineyards.
Yellow Fruits, Apricots, Peeled Apples, Yeast
Its bouquet is buttery, with hints of boiled apple, lemon, and yellow rose, leading off to sensations of dough and herbs.
The taste is dry, refreshing with a perlage that elegantly surrounds our palate, cleaning it nicely. At the same time, it displays structure and is elegantly persistent with a fruity, tropical character in the end.
