Grape Republic - Bailey A (2019)

100% Muscat Bailey A from Nirasaki City, Yamanashi Prefecture is used. 24% is spread on the bottom of the tank in the whole bunch, and the remaining 76% is de-stemmed and placed on the whole bunch to create a semi-maseracion carbonic state at the bottom. Squeeze and squeeze for 6 days. Pump over several times a day. Aged in stainless steel tank for 8 months.

Established in 2015 by two friends and restaurant owners, Kazuomi Fujimaki and Takayuki Taira, Grape Republic is a producer of wine in Japan, predominantly from Labrusca grapes in pergola. Wines from own vineyards as well as supporting ageing local growers.
