Born and Raised in the Jura, Olivier Boulin is a philosopher turned "neo-negoce", making wine as Le Nez de Goth. We met Olivier at his parent's house in Dole where he houses his old wooden press. His idea was always to "grow his garden at a friend's house", and he's very lucky that for the most part his friends are esteemed winemakers all working naturally.
His fruit is all organic or biodynamic, he works manually and diligently, cranking a basket press through the night outside of his parents' garage. The wines are fermented and aged in a 17th century cellar in Champions before gravity bottling with zero additions.
