Shirts & Skins - Petit Homme Qui Chante (Little Man Singing)

Harvested September 9th, the fruit was chilled overnight in walk-in cooler.  The following day we destemmed the cluster and cold-macerated the skins and juice for 8 days. 

The skins/must/juice was then pressed and fermented/aged in one 225L 10th use French oak barrel.  We bottled it back at the end of February 2021.  There's a slight oxidative quality to the wine that really works nicely with the ripeness, aromatics, and texture of the wine combined with above average acidity for the region. 

The wine was made without additives, inoculants or filtration.

Started by Shawn Eubank and Sergio Pinzon in 2016, Shirts & Skins works with fruit local to the Mid-Atlantic of the US producing highly drinkable, no additive wines.  The focus is on experimentation and new techniques in the winery so don't expect to see the same wines and labels year after year!

Apricots and quince followed by a tropical touch of bananas and pineapples (aka Bananas & Ananas) with hints of rustic bread with a medium body and a crisp medium acid driven finish.
