Revel Cider - Cursive (2021)

Apples, Pears, Blueberries, Maréchal Foch grape skins. Wild ferment

We love blurring lines. One of the most exciting things for us is layering fruit in a way where it's tough to tell where one ends and the next begins.

Cursive is a blend of Bartlett perry, heritage apples, fresh blueberries and red wine from the hybrid grape: Maréchal Foch. Each fruit melds into the next—woven into a single thread of pure, unadulterated joy.

Revel Cider & ibi wines started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2021, our team was seven people strong — with over 1000 cases of Revel cans and bottles shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

Ripe Bartlett pears are big in the aroma. Your first sip starts with soft blueberries, ending with a kiss of tannic astringency from the red wine, leaving your palate ready for more. Subdued acidity, and bright apples tie it all together. It almost tricks you into thinking it's sweet.
