Revel Cider - Ostara: Dandelion (2020)

Plums and petals are two of our favourite things. Like all ingredients we use, both are fleeting. Transient yet punctual in their annual rhythms.

This version of Ostara was aged on Golden Plums for 8 months. To it, we added 100lbs of dandelions that we foraged on our friend's farms, all within 50km of our cidery.

Spontaneously fermented with our native microflora.
Ingredients: Apples, dandelions. Golden Plums

Wild ferment, zero added sugar.

6.6% ABV | 750mL

Revel Cider & ibi wines started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2021, our team was seven people strong — with over 1000 cases of Revel cans and bottles shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

It has a shockingly intimate dandelion aroma - like if you made a pillow out of dandelions and stuck your face in it, this is what it would smell like (we imagine).

Bright plant acids are tempered by a subtle sweetness and texture imparted by the pollen. This vintage you'll find an additional herbal depth, and slight tannin from the flowers.
