Shirts & Skins - Rosé Pét-Nat (2021)
Free-run juice of Chambourcin, fermented in neutral french oak barrel. Very long, slow fermentation in barrel. The wine was bottled 3 months after harvest, then very very slowly fermented in bottle another 6 months. Despite Chambourcin being a tintera grape, the wine picked up very little color and has a lovely light pink hue. Ripping acid and fine bubbles. Undisgorged. No additives.
