Picpoul, Viognier, Roussanne, Vermentino, Petite Sirah, Mourvèdre field blend.

The reverse saignée was where half of the total fruit was added to a fermenter as uncrushed destemmed berries. The other half (Petite Sirah & Mourvèdre) was direct-pressed juice that was pressed into those clusters and pumped over daily. It was left on the skins for five days until it was pressed and aged on lees in 225L neutral oak barrels for 7 months, with no battonage and topped every 2 weeks. As always - unfined, unfiltered, no SO2.

We believe in old world style with fresh appeal starting with exceptionally farmed organic grapes. In the cellar we add nothing to the wine - no added sulphur, commercial yeasts, nada. This style of winemaking is often called Zero Zero today.
