The grapes came were foot crushed, macerated overnight, and then pressed to a stainless tank for fermentation. After primary fermentation, the wine was racked off the lees. We made an addition of unfermented grape must before bottling and bottled under crown cap with 12g of residual sugar from the addition. As always, bottled unfined, unfiltered, and with no addition of SO2.
